One approach to more successful "Healthy Vending" is to have a machine
dedicated to the concept and make it visible to potential customers as such,
rather than have a few items mixed in with all that unhealthy stuff in the
same old machine.  So says a vendor in Colorado, if I remember correctly.  

So, if you have not heard about or seen them, there are some new vending

Note:  As many have pointed out, there are no shelf-stable fresh sliced
apple products or other fresh foods with expiration dates of 4 weeks from
receipt at the warehouse and or that do not require refrigeration.  If you
have a local licensed supplier and can change out the products daily in your
refrigerated snack machines, and so on, great!  In many locales, to do some
of the truly fresh-prepared items or even load fresh fruits, you may need a
health permit and other things in order to comply with your health codes as
a food preparer and server.

I am sure others will be quick to point out some of the pitfalls and
opportunities.
