I use a Mac, and I use a program called Vuescan, which can be found at

http://www.hamrick.com/
It has basic OCR, so nothing flashy, but it will read documents, books, mail, etc.  For more sophisticated needs or more varied scan environments, keep in mind that you can run a windows virtual machine on a Mac, allowing you to use OpenBook or whatever.
