You won't need to buy bottles with each different age, but you will need to buy different flow nipples as newborns need a slower flow then say an eleven month old.
The flows go from slow to medium to fast.

I hated the Playtex bottles.
You will be able to feel when the baby needs a break, at least I could. My husband never could feel it.
Also, know that some kids spit up more then others. Some may be intolerant or allergic to various formulas so if you think the spit up is too much, you do have several solutions depending on what is going on.

Just go to Walmart or wherever, buy the most simple bottles you can, Evenflo comes to mind, get some four ounce bottles, some six ounce and some eight ounce.
That should get you good to go.

Hi,
 As some of you know, we're in the process of being licensed as foster parents.
 We're close to the end of the process, and I'm looking at baby bottles.
 I have a friend who uses Playtex, and  her son seems to not have
 spit-up or other issues.
 Can you give me your thoughts on Playtex bottles? Should we go with
 AireVent or should we go with the other kind (sorry I can't remember
 the name, but it uses the liners and seems to be able to be felt as it
 empties.) We'll be taking children from infant to age 3 (obviously a
 3-year-old wouldn't be bottle fed), but I'm pointing out that we don't
 want to have to buy bottles with each different age.
