How about a simple sandwich with hummus and vegetables on whole grain
bread? 
If chopping up veggies is too complicated, just put some lettuce and
cheese 
(if the person isn't vegan) on the sandwich. There are also veggie
burgers 
which are easy to grill or heat up in the microwave or stove. Some
brands 
include Garden burgers, Grillers and Grillers Prime, and Morning Star. 
Making a bean burrito is also fairly easy.
