I've not heard of ginger helping glucose levels but inflammation, which causes arthritis and other conditions. There are studies suggesting homeopathic treatments like ginger, turmeric and curry can decrease inflammation, but results vary.

I cook a lot with ginger, but I haven’t really noticed it affecting my blood sugar in any way. However, the baking soda and the pancreas is not a myth. After my husband had his kidney/pancreas transplant, he had to take sodium bicarbonate, which is basically a pill form of baking soda. He was on it for quite a wile. I am not exactly sure of the medical reason behind it, but I know it had something to do with the pancreas.
