My best advice would be for you to ask these questions to the student that will be receiving the textbook.  
Generally speaking, I like the whole tactile drawing NOT just enough for me to understand the concept. I want to feel what the sighted people see. 
In terms of graphing... I prefer to do graphing problems on my own. But sometimes, human readers are just more efficient. 

Again, best to ask your student. :)
