Mark,

Two questions and a disclaimer...
Are you 18 or older or otherwise a legal adult?
Will you along with your prospective guide dog be living in your parents 
home at any time, summers, spring break, etc?

Now the disclaimer, I'm not a guide dog school employee, actually I've never 
attended a guide dog program as a student, so take what I'm about to say 
however you like.  I think if you're a legal adult and you aren't dependent 
on your parents, then there's no harm in going ahead with your plan.  I 
wouldn't think a guide dog school would count your parents disagreement 
against you in that case.

As for neutral literature on guide dogs...I'm really not coming up with 
anything.  I think NAGDU or the NFB has info on guide dogs, but I'm going to 
guess that your parents would consider that to be biased in favor of guide 
dogs.  Perhaps an O&M specialist or a Rehabilitation Counselor?
