Maria,

Hand signals are just gestures used to indicate a specific command to 
the dog.  A very common one is to hold your hand out palm flat toward 
the dog to indicate "stay".  When guiding I use my hand in a sort of 
loose pointing gesture to indicate the approximate direction I want to 
go.   When I want Monty to find the next turn right I use a sort of 
wrist flip motion with my hand loose and no fingers pointing.   Not 
everything I ask of Monty has an accompanying hand signal.
