Jewel,
I feed my cat on top of a bookcase that is about 3 1/2 feet tall. It isn't too high for her to jump up on, and it's too high for Mr. Pascal to reach her food. Do you have a place that is about that high to feed her on? I know that the litter boxes that are covered do not work for me, my cats are always claustrophobic! /smiles/. I think my one cat would have got stuck in the door as she was tubby and not so graceful!
When I used a pet gate, it would not fit in all of the rooms. If you can't find one that is narrow enough, you might consider moving the litter box into a different room. I used to keep mine in the spare bedroom, since there wasn't room in the bathroom. My Stepmother kept her cat's litter box in the kitchen, but I wouldn't recommend that, LOL.
If you are up for a challenge, you could try to teach the cat how to use the human toilet. We did this with one of our cats in the past. 
I've struggled with my dogs getting in the litter box for years. I have heard that they make some kind of product that you put in your dog's food to make poop taste bad to them, but I do not know what it's called, or if they still make it. And it may only work for dogs who eat their own poop, and not on cat poop. 
I wish there was a really good solution out there...

The thing is, I have been looking at expandable gates. All of the ones I have seen start at 26 inches and expand out from there. Our bathroom door is very narrow. I hate it, but it is an older apartment, and that is how they used to make apartments. 
I am going to try a hooded litter box, but I will still need the gate because the cat's food is in there also. We tried to put it up high, up on the fridge, but the cat refused to go up there and would not eat the food if we put her up there, even though we knew she was hungry.
