Hi Ginger,
I have used several different methods.
Using a knife to dip into the frosting, I wrap my hand around the upper perimeter of the cupcake so not to go past the edge. I use the icing sparingly, and once I’ve frosted them all, I go back and add more and stay just shy of the edge.
I’ve used a spoon, plopped a spoonful on top, then used the bottom of the spoon to spread it outward, making the icing more of a swirled hill.
I’ve even tried spreading all the icing out on a plate, turn the cupcakes upside down, then as if I were turning a door knob, I’ve swirled the cakes in the icing then lifted them straight up. That was my least favorite method unless I’m only making a very small amount of cupcakes.
I tried those frosting bag things, but I guess that takes practice, because it ended up being a disaster for me.
I like to add sprinkles or chips to cover imperfections I don’t see, but are probably there.
Most often, and this may not appeal to everyone, but I’m pretty much a hands and fingers on kind of person when I cook or bake.
Making sure my hands are clean, once I’ve placed a lump of icing on top of the cupcake, I feel my way around, pushing a bit here and flattening a bit there to make sure it’s spread on evenly.
The best part about that is, once you’ve finished icing all the cupcakes, you get to lick your fingers!
