I have been using pressure cookers of all types since 1975, some on the stove and most recently for the past 6 years an Instant Pot. The only reason I can think of for food flying all over from an IP is that the person did not follow directions correctly. They are extremely safe. In all these decades, I have never had a problem unless I caused it. My daughter also has an instant pot and uses hers frequently also and has never had a problem.
At the end of cooking, if the pressure is released too quickly (and you control that, then as steam escapes, some juices from the food might also escape. But if you let the pressure come down naturally for a bit first, that doesn't happen.
I think your friend screwed up, sorry about saying that, but there's no other explanation.
The newer Instant Pots are even more safe than the older one I have.

I’ve heard of certain issues with the pressure cooker, not working correctly and the food going everywhere. This could simply be a couple of isolated incidents, and I’m happy that no one else has had issues. I’m just trying to be cautious. I love cooking and experimenting in the kitchen with different foods, and I was wondering what other people had to say.
