I do this with some frequency and I've been successful with it so far. I
definitely recommend practicing before you're actually ready to do this.
I do this over a bowl that I place next to the mixing bowl the yolk is going
in. If you do not care about preserving the egg whites to use later I
suppose you could do it over the trash but that feels wasteful. After
washing my hands I place one cupped palm over the bowl and crack the egg
directly into it. I allow for my fingers to be slightly separated so that I
can let the egg whites slip through. I use my other hand to feel for the
yolk (it will feel distinctly bulbous) and grab it once I've found the
outlines of it and toss it in the bowl. One thing to note is that if you are
using cheaper eggs identifying the egg yolk may be slightly more difficult,
I've noticed when I'm using cheaper/non organic eggs the yolk isn't as
tactically distinct.

Hi all,
I plan to make a devil's food cake next week that requires some egg yolks
but no whites. Also requires some whole eggs, and those are easy enough. I
do not have an egg separator, and am wondering if there's another way to do
it safely without getting lots of shells in the bowl. I would appreciate
some advice. This would also be good because I plan to make meringues and
other such things. Thanks so much!
