Good question. Your guacomoli sounds good. Your post reminded me of a recipe
that I've wanted to try making for a party since when I had it almost a year
ago it was very good. It seems very simple, I think the only really
complicated thing could be mixing/creating fillings if you wanted to get
creative. Also, a good thing about this recipe is that it can be very easily
adapted to fit the needs of the crowd you are serving. 

Stuffed tomatoes:

I personally had this recipe using cherry tomatoes, but I imagine that you
could use bigger tomatoes as well. There are also a variety of fillings that
you could use. Because I had it with cream cheese and it is probably the
simplest, that is what I will use in this recipe. 

Ingredients
*tomatoes equivalent to the number you wish to serve (is you want to serve
24 people, you'll need 24 tomatoes)
*number of packs of cream cheese equivalent to the amount you will need to
use to be able to stuff the tomatoes. The amount of cream cheese per tomato
is pretty small, but just to be aware. 
*knife/scooper for slicing tomatoes
*pan to put the tomatoes in
*toothpicks (optional)
*basil (optional)

Cut a small portion off the bottoms of each tomato so they will sit on a
tray without rolling. slice off the tops of each tomatoes and scoop out
centers with the small end of a melon scope to make a hollow yet sturdy
shell; discard centers. TIP: Turn cherry tomatoes upside down and use the
bottom for the top when stuffing. This keeps them standing straight.

Invert tomatoes onto damp paper towels and cover with plastic wrap.
Refrigerate until ready to fill.

Using a small spoon, fill each tomato with about 1 teaspoon of the filling
of your choice. Refrigerate until ready to serve. Remove from refrigerator
15 minutes before serving.

Notes:
There are probably other ways of doing this, this is just the one online
that seemed the simplest.
When I had these they were on toothpicks. To do this, just stick the
toothpick gently through the bottom of the tomato. It should stay firmly on
there, but not interfere with the stuffing of the tomato. Personally I think
they look better on toothpicks, but that is just me. 
When I had these there was also a basil leaf on the toothpick below the
tomato. This served as a garnish, as well as adding a bit of flavor to the
tomato. 
You could use ingredients from your garden if you grow vegetables and herbs.
This is a grate way to use the herbs from your garden, and also, you could
do something with all of those extra tomatoes from the plant. You could
probably also get really creative with mixing herbs for fillings.

Hi, OABSters,

I'm looking for some really good recipes for the summer so I can start
contributing dishes to family gatherings.  With 4th of July, Labor Day, and
random pool parties left, there will be plenty of opportunities for me to
practice culinary skills.  Do any of you have some good recipes?  I'll share
one I recently got from one of my mom's friends, too.

Easy Guacamoli With a Kick
Only takes a few minutes to prepare, and is low cal.  If you're a real
health nut, avocado is also a super food.
Ingredients: 1 avocado, some Greek yogurt, any other things you like in your
guacamole such as diced tomatos or cilantro, and hot sauce.
Step 1: In a bowl, mash the avocado to the consistency you desire.  I prefer
mine a little chunky.
Step 2: Mix in some Greek yogurt for a creamy texture.  2 or 3 table spoons
should do it, though you may need a little more if you are not going for a
chunky guac.
Step 3: Mix in any additional ingredients (Diced tomatos, cilantro, etc).
Step 4: Add a few drops of hot sauce to taste, and mix well.
Step 5: Cool in fridge and serve cold with chips and/or salsa.
