To answer your question about horses. Yes blind people can ride horses independently. There is even an NFB email list for blind equestrian and agriculture. There are many of us who ride horses.  

I think that playing football and hockey are probably not possible for a blind person but who cares. I think one problem with public school physical education classes is the emphasis on only ball games. There are so many sports and activities that a person can engage in that ball games are insignificant. Blind people. Can do gymnastics, martial arts, cross country skiing, hiking, boating of all kinds, the list is endless.
