Wow! Larry's recipe sounded like a whopper! (smile) Lots of ingredients!!!

Since I raised my boys as a single mother, I had to learn to cook econically and I am one to go for the quick and easy recipes. Here is one that my boys love!

Cheesy Chicken Stuffing Casserole

Box of Stuffing Mix Chicken flavored (include seasoning mix)
1 cup of shredded chicken breast (or more if desired)
1 can of Cream of Mushroom soup
1 cup of chicken broth
Shredded cheddar or other preferred type of cheese

Combine all the ingredients without the cheese into a 2 quart casserole dish.
Stir/mis well.
Put in oven to bake for 30 minutes
Take out casserole dish and spread shredded cheese on top of the casserole
Place back in the oven, turn it off and take out when cheese is melted.

Serve with a salad and you have a well balanced nutritious meal! My boys always wanting more and I also baked this to take to church for benevolent acitivities or other social activities. It was always a hit. To make a bigger casserole just double up on the ingredients. Quick, easy and no sweat!!! (smile)

Darlene
